- 1 tbsp ginger-garlic paste
- 1 tsp whole black peppercorns
- 4 cloves, 3 green cardamom, 2 black cardamom, 1 cinnamon stick, 2 bay leaves
- 1 tsp coriander seeds
- 1 tsp fennel seeds (saunf)
- 1.5 tsp salt
For the Pulao:
- 2.5 cups Jazaa Basmati Rice — soaked 30 minutes
- 3 tbsp Jazaa Cooking Oil or ghee
- 2 medium onions, thinly sliced
- 1 tsp cumin seeds
- 2 green chillies, whole
- Salt to taste
- Fresh coriander and mint for garnish
- Fried onions (birista) for garnish
Step-by-Step Instructions
Step 1: Make the Yakhni (Broth)
Place chicken, water, halved onion, ginger-garlic paste, and all whole spices in a large pot. Bring to a boil, then simmer on medium-low heat for 35–40 minutes. Strain the broth through a fine sieve — you need exactly 4 cups of clear broth. Set the cooked chicken pieces aside. Discard the boiled onion and whole spices.
Step 2: Fry the Onions
In a separate heavy pot, heat Jazaa Cooking Oil over medium-high heat. Fry sliced onions for 12–15 minutes until deep golden brown and crispy. Remove half for garnish. Add cumin seeds and green chillies to the remaining onions and fry 30 seconds.
Step 3: Add Chicken and Rice
Add the reserved cooked chicken pieces to the pot. Stir gently. Drain the soaked Jazaa Basmati Rice and add to the pot. Mix carefully.
Step 4: Cook in Yakhni
Pour the 4 cups of strained yakhni broth over the rice. Taste and adjust salt. Bring to a full boil on high heat. Once boiling, reduce to the lowest heat, cover tightly, and cook for 18–20 minutes until all the broth is absorbed.
Step 5: Rest and Serve
Rest covered for 5 minutes. Gently fluff with a fork. Garnish with fried onions, fresh coriander, and mint. Serve with raita and a simple salad.
